How would you enjoy the most beautiful summer in Vancouver? With waves on the beach in English Bay? Or hiking on Whistler’s snowy blackcomb? Or you instead nest in the back of a beautiful park, with a glass of wine in hand, enjoying the glowing sun, waiting patiently for the smell of grilled gourmet to soon turn into a unique dinner experience that compliments the wine you are sipping.
Not long ago, I attended a very interesting English Country party. The party was meant to be a private wedding anniversary event for Dr. Dennis & Lydia Nimchuk, but it grow into a ticketed public event with the proceeds being donated to Save the Smile Public Outreach Program, a program that gives the province an opportunity to provide dental care to children.
The venue was the grandmother’s backyard built in 1926. The event featured English country theme as the party theme, English afternoon tea, Beta5 Chocolates cream puff, smoked salmon sandwiches and a selection of canapes such as pickled golden beets with whipped goats cheese, duck prosciutto, bruschetta, accompanied by live music and all summer best wine provided by World Wine Synergy Group namely the Casale del Giglio series, Sarmentero Winery.
Not yet hungry, but not being able to resist the inviting smell of grilled barbecue, I could not help but to follow the fragrance to the old side door, where I found chef Darren Brown, former executive chef of Fairmont Pacific Rim and owner of Chefdbrown Ltd., and Ryan Bissell of North Arm Farm preparing dinner for us.
I saw a giant grill with four or five porchetta from Paradise Valley Farm. A large plate with a flower bud green blue baby zucchini that according to Chef Ryan was picked up from the North Arm Farm the same day. It was the first time for me to taste this delicacy, eating all including the bud. The crispy and delicious taste of baby zucchini has inspired me to plant some zucchinis on my home garden next year and also follow the chef’s recommendation of picking them up fresh and barbecue them.

The dinner started with the Opera Brut Trento Italian DOC bubbly wine as toast, and followed by the first course: charred carrots with yogurt and radish, seared flower on baby zucchini, garlic scape pesto, smoked nochella de bellise olives. followed by Albacore tuna crudo.
The Albacore tuna crudo was matched with the tropical fruit-rich Bellone Bianco Lazio IGT ‘Antium’, which has a crisp mouth feel and is suitable for fish and seasonal vegetables.
Main dishes were charcoal grilled wild Ivory chinook salmon and porchetta respectively, with vegetables such as head of red cabbage, pea seedlings, fresh peas, garlic, etc. The matched wine was a rich, deep-fruity Petit Manseng Bianco Lazio IGT, that had some mild sourness in its sweetness.
The celebratory dinner was completed with Raspberry and Okanagan apricot crumble as dessert matched with the combination of The Macallan Single Malt Whiskey and Highland Park Ten Years Single Malt Whiskey.
