▸ A floral expression with hints of quince and anise. ▸ Well-balanced with a hint of honeysuckle on the finish. Concentrated, but has a lightness of touch that brings elegance. ▸ Why “Catarina”? – Catherine of Siena, Saint and Doctor of the Church, went to Avignon in 1376 as ambassador of the city of Florence. She persuaded Pope Gregory XI to return to Rome to relocate the Papacy back where it belonged. ▸ Catarina blanc is a single-vineyard wine. The plot is located in "La Cerise" lieu-dit, in the villlage of Châteauneuf-du-Pape. ▸ The vines are 40 years old on average. The soils are clay-limestone, and rolled pebble type. ▸ After pressing, the juices are settled. 60% of the wine is vinified using natural yeasts in new French oak demi-muids, the other part in cement vats. Batonnage on fine lees is done during 8-9 months.
