▸ Les Roches Blanches express the mineral memory of Château Roquefort's limestone terroirs. ▸ In Castelviel, the highest point in the Gironde, Sauvignon Blanc flourishes on clay-limestone soils where fossilized oyster beds are exposed. ▸ The minerality of this wine is striking, with notes of fresh citrus, wet pebbles, passionfruit, and a touch of herbs. ▸ The vines are cultivated using organic farming methods. ▸ Inertness of harvest, maceration of the skins, low temperature fermentation, aged in stainless-steel vats.
