▸ Deep, bright straw yellow tending to gold. Intense and long lasting on the nose with notes of yellow flowers, mediterranean herbs, peaches and exotic fruits. ▸ The mouthfeel is full, centred and persistent thanks to a pleasing tang and pronounced mineral notes, while hints of mint and resin derive from the evolving tannin. A complex but appealing wine, destined for longevity. ▸ Bellone is an ancient grape, once called "grape bread" by Pliny the Elder. ▸ Though most European vines were lost to phylloxera in the 1870s, some ungrafted Bellone vines survived near Anzio and Nettuno thanks to the protective sandy soil. ▸ Fermentation begins on the skins for two days, followed by soft pressing. Using natural yeasts, fermentation in tonneaux lasts two weeks. ▸ The wine then ages on the lees for two years without malolactic fermentation.
